Hi, I’m Ileana from Palermo, a professional chef and guardian of a culinary tradition rooted in memory, the seasons, and time-honored practices. My culinary journey began in my family, thanks in particular to my mother, through recipes passed down through the generations and rituals that are repeated every year in tune with the rhythm of the seasons.
My journey in the hospitality industry began in the Madonie Mountains, where I learned that hospitality means, first and foremost, sharing the story of a place and building a connection with people.
This previous experience led me to combine hospitality and cuisine, sharing my culinary roots through experiences dedicated to Sicilian tradition.
Having been aligned with the Slow Food philosophy for over twenty years, this journey has reinforced my approach to cooking: respecting the seasons, supporting small-scale producers, and choosing ingredients that reflect the local area.
Above all, I love traditional Sicilian cuisine—the kind born of simplicity and ingenuity, where just a few ingredients are transformed into dishes rich in history and identity.
